How old was Goku when he beat Frieza?
This is just the first example of Goku aging inconsistently due to being deceased. The Frieza Saga is arguably one of the more memorable Dragon Ball Z narratives, running from episode 36 to episode 125.
He starts roughly at age 23 at the beginning of Dragon Ball Z, 24 (with the body of a 23 yr old, as he shouldn't have aged while dead) when he fights Vegeta, 25, but physically 24, when he returns to Earth after killing Frieza.
Two years after Frieza's defeat, Goku, now 27, travels back to Earth where he meets Dragon Ball Z's Future Trunks and learns about the impending arrival of the fearsome androids.
After both Goku and the series experienced a 10-year time jump for the epilogue, Goku was now physically 37 and chronologically 44, while Vegeta also points out Saiyans' aging slows once they hit their physical prime to fight longer and more effectively.
Goku defeated Frieza during the climactic battle of Dragon Ball Z's “Frieza Saga,” one which began after Frieza decided to hunt down the Dragon Balls of Planet Namek in order to use their magic to become immortal. During his quest, Frieza laid waste to Namek, killing everything and everyone who stood in his way.

Their lifespan is known to be longer than that of humans, as Frieza did not visibly age over 25 years and is at least 70 (generally assumed to be a few centuries old) by the time he arrives on Namek, meaning that King Cold is at the very least a century old.
Upon his resurrection through the Dragon Balls, Goku remains physically 23 but chronologically ages to 24 when he helps drive Vegeta from the Earth.
Story. Goku's eldest son, Gohan, is a polite little boy with dreams of growing up to become a great scholar. His name comes from Goku's late adoptive parent, who we know as Grandpa Gohan. Gohan was only four years old when he was kidnapped by Raditz while visiting Kame House with Goku.
Goku after the 1,000 year time-skip in Dragon Ball Omniverse. He first appeared in the Return of the Gods Saga to help Adrian fight Majin Beegito. His debut was short as he was killed immediately. He has been shown to be an entirely different version of Goku and may be a completely different being.
Why did Goku stop aging?
The Saiyans have an aging process that differs greatly from what humans go through. It was stated by Vegeta in Dragon Ball Super that Saiyans remain in their prime until they turn 80 years old. Because of that rule about Saiyan biology, the anime can easily keep Goku's youthful look for years to come.
Vegeta's official birth year is Age 732, making him 48 years old by the end of Dragon Ball Super in Age 780. However, this doesn't take into account the amount of time he has spent inside the Hyperbolic Time Chamber, which he has spent a collective 5 years inside.

The Saiyans are stated that they live as long as normal humans, they just stay in their childhood & adulthood for very long, until they age from boys/adults to adults/old men rapidly.
Frieza cannot expect to defeat a God of Destruction who can casually destroy halves of planets on the tap of his fingernail. Plot armor had always affected Beerus' strength, and it's probably not a great idea to buff Frieza so much that he can casually go toe-to-toe against the likes of Beerus.
Whis trained Beerus himself and is much stronger than him too. It's clear that Whis could easily beat Frieza in a fight if required. There would be no contest between the two if they do decide to battle.
This shows that Frieza was ahead of his time in terms of refinement and proficiency in developing the deadliest attacks possible–and that's why Frieza is currently miles ahead of Goku in terms of power level. In Dragon Ball Super, Frieza unveiled an all-new form: Black Frieza.

Did Frieza wish to become taller?
When Frieza was first introduced in Dragon Ball lore, he was attempting to steal the Dragon Balls of Planet Namek to make himself immortal so that he could rule the universe for all eternity. In Dragon Ball Super: Broly, however, Frieza wants to use the near limitless magic of the Dragon Balls to make himself taller.
Trunks first appears in chapter #331 The Young Boy of Mystery (謎の少年, Nazo no Shōnen), published in Weekly Shōnen Jump magazine on July 15, 1991. Here he is a mysterious seventeen year old capable of transforming into the Super Saiyan state, who appears and singlehandedly kills Frieza and his father, King Cold.
Dragon Ball GT opens five years later, shifting Goku to physically 42 but chronologically 49 years old. Emperor Pilaf steps in to complicate things even further after reverting him back to an 11-year-old while retaining his adult mentality.
During the Saiyan Saga, in which Goku sacrifices his life so Picollo can take out his brother Raditz, he dies a 23-year-old man. This is where the timeline can get confusing. While he is resurrected a year later, he is brought back and would be chronologically 24, but his body remains the same as when he died at 23.
